It has felt SO good getting back to writing, y’all. The move was a little hectic, but we are feeling great in our new home and I’m loving a larger kitchen! I lost a little motivation to create new recipes while I was prioritizing moving and work and staying healthy and stress-free. Now I’m back with my first recipe in awhile: Pizza Cauliflower Tots!

Egg Salad: Hold the Mayo
Mayo is a NO GO for my palate. I cannot stand the smell, the taste, the sound, the feel…mayonnaise is an attack on all of my senses. Needless to say, I have never been a fan of egg salad, chicken salad, or any other mayonnaise-based food. Seriously, sandwich making is a painful process if I need to spread mayo and mustard.
No Tomato Wasted
Simple, clean, and tasty–these are the words I like to keep in mind when I cook. I don’t have time (or money) for fancy pants cooking. I also try to use all of the fresh produce I buy during the week so little goes to waste. Freeze or use, never let produce go to waste!
Mango Madness: Tropical Daydreaming Part 2
I noted in my last Mango Madness post that I have been daydreaming about a tropical paradise. The warmer weather is setting in and I so want to be waking up to the sounds of the waves and feeling the sand beneath my toes. Can’t you just smell the fresh ocean breeze and the sweet smells of paradise?!
Well and girl can daydream, right?
