Summertime Chicken Salad Recipe
Ahhhhh summertime. Isn’t it the greatest? Warm weather, longer days, backyard barbecues. Not to mention the barbecue sides! Potato chips, chicken salad, watermelon, veggie kebabs, sweet corn on the cob–yum, I love summertime cuisine. To me, summertime is enjoying time with friends, finding some downtime (mostly in the A/C in Texas), and enjoying the delicious fresh flavors of the summer months.
Fourth of July has always been one of my absolute favorite holidays. I always get nostalgic around the holiday and think about summertime in the mountain watching the Independence Day parade, hiking, fishing, grilling, and sleeping outside under the stars. It was seriously awesome to see all of the stars at night in the mountains!
Fresh Summer Flavors
What are some of your favorite summertime flavors? Do you prefer certain grilling fixins at your backyard BBQ? Watermelon and corn on the cob have got so be some of the best summer flavors. Pair those two next to a grilled hot dog and I am set!
There are so many summertime flavors that can be found fresh at the farmers market: berries, melons, stone fruit, summer squash…the list goes on and on! I really encourage anyone to eat as fresh and local as possible and farmers markets are perfect for that. Not to mention they are a fun Saturday morning activity with friends or family.
Chicken Salad Thoughts
We all know my feelings on mayonnaise. I am not the biggest fan. So, just like egg salad, chicken salad has been on my “meh, no thanks” list for awhile. Until I decided to revamp it with some new, lighter flare! I mean, I couldn’t pass up some of those flavors when the only thing holding me back was that mayo. But still, no wayo on the mayo.
Chicken salad is such a great summertime barbecue side or a simple dish to mix up for lunch. (I guiltily admit that I ate most of the bowl after I shot the photos since I hadn’t eaten lunch yet). I have opted for the quickest version possible and grabbed the rotisserie chicken from the market. However, always feel free to bake up your own chicken breasts if you have the time! The rotisserie will just save on some time since we all know life can get a little nuts every now and then.

- 1 cup chopped chicken (plain rotisserie or bake your own)
- 1/2 cup chopped apples
- 1/4 cup chopped celery
- 1/4 cup chopped green onion
- 2 tbsp plain greek yogurt
- 1/4 tsp salt
- 1/8 tsp pepper
- Place all ingredients in a small mixing bowl.
- Gently fold ingredients together to coat with yogurt.
- Serve immediately or cover and store in the refrigerator. Store for 6-8 hours if necessary.
