Kale Onion Prosciutto Scramble: a perfect combination for any meal. Although this may be classified as a breakfast dish, don’t limit yourself to just eating it in the morning! Breakfast is the most important meal of the day and I don’t see any problem eating breakfast for all meals of the day! Nobody said eggs and pancakes only need to be eaten in the morning!
You know what? Sometimes plain, old eggs get booooooring. I’m always thinking of simple ways to make them more interesting. Don’t get me wrong: I can eat bacon and egg breakfast tacos like a CHAMP. I do think it is important to make meals as nutritious as possible.
I follow a simple nutrition rule everyday: TWO meals a day MUST have vegetables in them. And not just the tasty starchy vegetables. I’m talking greens, people. EAT YOUR GREENS!! Salads, sautéd veggies, smoothies…get ’em in folks!
Greens, Eggs, and (sort of) Ham
One of the easiest ways to add greens to breakfast is in a quick scramble. Toss in some spinach or kale to those eggs and instantly have a healthier, more nutritious meal! Give yourself the gift of health and delicious flavors all on one plate.
This kale onion prosciutto scramble recipe is a perfect blend of salty from the prosciutto and sweet from the onions. If you aren’t a huge kale fan, substitute for some baby spinach. If you are feeling extra crazy, and maybe it’s the weekend, throw on a little crumbled goat cheese!
Kale Onion Prosciutto Scramble
- 6 eggs, beaten (more if desired)
- 3tbsp ghee
- 2c kale, stems removed and torn into 1” pieces
- 1/2c sweet onions, chopped
- 1/4c prosciutto, torn into 2” pieces
- Over medium heat, melt ghee and coat bottom of a medium sauté pan.
- Add kale and onions to pan and let sauté for a 1-2 minutes. Add beaten eggs to pan over kale and onions.
- Place prosciutto throughout the pan.
- Serve immediately.
