Sexy Strawberries on a Budget
Valentine’s Day is a few days away and love is in the air! We are budgeting and trying to save our dollar bills right now so we decided to have a romantic dinner at home. And who wants to spend too much money on an over-priced meal in a crowded restaurant anyway?! AND I think everyday should be full of love and candy and showing your love and gratitude to those around you. But anyway, we are enjoying a nice evening at home.
Our plan: He’s got breakfast covered. We will cook a delicious dinner together. I’m holding down dessert.
The pressure is on. I want to keep our meal budget friendly but I also want it to be tasty and romantic and fun! Strawberries are back on the shelves at the market and a semi-affordable price ($3.49/carton). We also LOVE cheesecake–we had Oreo cheesecake for our wedding cake YUM– but cheesecake is so time consuming and requires so many ingredients. And, let’s be real, I’m the sugar fiend in this family so he will eat a piece of cheesecake and I’ll hoard the rest. We do NOT need that happening!
Bitesized and Beautiful
Bitesized is the way to go for dessert. We even had an entire dessert bar at our wedding with over 400 bitesized desserts. And yes, there were bitesized cheesecakes.
Fruit is also a great way to enjoy a fresh, sweet, juicy dessert. Growing up, we always had fruit on the table with dinner. It was our dessert. But then I also had dessert. I’m telling you, major sweet tooth. However, it was always nice having the fresh fruit on the table after a delicious meal. Fruit is natures simplest dessert!
Now combine fruit AND cheesecake AND bitesized together and you’ve got a guaranteed dessert win. There aren’t too many better things in life than traditional cheesecake topped with bright, beautiful berries. Rich and creamy with fresh and sweet. The perfectly beautiful bitesized treat!
Cheesecake Filled Strawberries
Now since we are on a budget I didn’t want to get too crazy with dessert. But I do want to incorporate some of our favorite flavors into our meal. Thus, I’ve created this no-bake cheesecake filling for fresh strawberries. It’s so simple to make. Prep everything ahead of time and fill the strawberries when you are ready to indulge! Pair with your favorite champagne for a little added romance ;).
- 8-10 large strawberries (rinsed)
- 2 Tbsp cream cheese
- 2 Tbsp mascarpone
- 3 Tsp powdered sugar
- 1/4 Tsp vanilla extract
- Remove tops of strawberries and remove core. Set aside.
- In a small bowl, place cream cheese, mascarpone, powdered sugar, and vanilla extract. Using a hand mixer, whip until ingredients are combined and smooth.
- Spoon the mixture into a piping bag. If you don't have a piping bag, place in a plastic bag, squeeze to a corner, then clip a small corner.
- Pipe mixture into each strawberry.
You can also use ricotta cheese instead of mascarpone. This will make a fluffier, lighter mixture but may require more powdered sugar.
