Sweet Bell Pepper

There are so many deliciously fresh flavors this summer! I went for the sweet peach last week, and now I’m wanting some of those sweet peppers. Sweet mini peppers give the big flavor or bell pepper in a bitesized form. Fill them with your favorite flavors and you’ve got a perfect bite!

Sacred Dinner Time

Is the tapas craze still a thing? Do people still love the small plates? I lived in Spain for a little bit while I was in college and I just loved their “grazing” mentality when it came to meals. Place big plates full of bitesized food and enjoy the evening. Plates of charcuterie, bites of cheese, delicious seafood bites, and other shared plates were passed around the table. Dinner lasted for hours and conversation would be lively. Food would be consumed slowly and thoughtfully. The Europeans really know how to do meals. There is not a big rush to get through a meal and get to the next thing in life. Meal times are sacred. Meal times are a joyful ritual.

Do you sit down and enjoy your dinner every night? Or do you grab something quickly and park in front of the TV? I always make sure my husband and I have dinner together. Doesn’t matter if it’s scrambled eggs or filet mignon–we always eat together when we are both home. I wake up early, he gets home late, but I will always try to wait dinner for him. It’s a good way for us to connect at the end of the day. There isn’t much time between him getting home from work and me going to bed, so the one on one time is important.

Try to make dinner time special, whether it is with other or solo. Enjoy the time and savor the food. Take in the flavors and sounds around you. Converse with company or be with yourself. Make dinner time something to look forward to every day.

Sweet Pepper Poppers

The Spaniards kept things simple with food. A few ingredients can go a long way. I wanted to keep these peppers simple and emphasize the flavor. I kept the sweet peppers raw because I like the crunch texture. However, the mini peppers could be roasted to add a smokier pepper flavor. Choose the flavors YOU like the enjoy those poppers!

    For Avocado Bacon Poppers
  • 3 mini sweet bell pepper, halved and deseeded
  • 1 large avocado, diced into 1/2" cubes
  • 2 pieces cooked bacon, crumbled
  • balsamic glaze (store bought or homemade)
  • For Hummus Feta Poppers
  • 3 mini sweet bell pepper, halved and deseeded
  • 3 tbsp plain hummus (store bought or homemade)
  • crumbled feta cheese
  • olive oil
  • sea salt
  • For Goat Cheese Honey Poppers
  • 3 mini sweet bell pepper, halved and deseeded
  • 3tbsp crumbled or soft, spreadable goat cheese
  • honey


    For Avocado Bacon Poppers
  • Place 1tbsp of cubed avocado in each bell pepper half.
  • Top each one with bacon crumbles.
  • Drizzle about 1tsp balsamic drizzle on each pepper.
  • For Hummus Feta Popper
  • Place 1/2tbsp of hummus in each bell pepper half.
  • Top each one with feta crumbles.
  • Drizzle each pepper with olive oil and sprinkle with salt.
  • For Goat Cheese Honey Poppers
  • Place 1/2tbsp of goat cheese in each bell pepper half.
  • Drizzle each pepper with honey.
